Ingredients:

  • 1/2 cup custard powder (Fosters Clark)
  • 2 cups milk
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 2 tablespoons lemon juice
  • 2 tablespoons sugar (for compote)
  • 1 tablespoon cornstarch (optional, for thickening)

Instructions:

  1. In a saucepan, combine the custard powder, sugar, and 1/2 cup of milk. Stir to create a smooth paste.
  2. Gradually add the remaining milk while stirring continuously. Place the saucepan over medium heat.
  3. Cook the mixture, stirring constantly, until it thickens and starts to bubble. Remove from heat and stir in the vanilla extract.
  4. Pour the custard into serving dishes and let it cool to room temperature, then refrigerate for at least 2 hours until set.
  5. For the berry compote, combine the mixed berries, lemon juice, and sugar in a saucepan over medium heat. Cook until the berries start to break down and release their juices, about 5-7 minutes.
  6. If you prefer a thicker compote, mix cornstarch with a little water and add it to the berries, cooking for an additional minute until thickened.
  7. Let the compote cool slightly before serving over the chilled custard.
