Ingredients:

  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1 cup pumpkin puree
  • 1/2 cup powdered sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 1/4 teaspoon salt
  • Whipped cream for topping (optional)
  • Graham cracker crumbs for garnish (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C) and line a mini muffin tin with paper liners.
  2. In a bowl, mix the graham cracker crumbs, granulated sugar, and melted butter until combined. Press the mixture firmly into the bottom of each muffin liner to form the crust.
  3. In a separate bowl, beat the softened cream cheese until smooth. Add the pumpkin puree, powdered sugar, eggs, vanilla extract, pumpkin pie spice, and salt. Mix until well combined and creamy.
  4. Spoon the pumpkin cheesecake mixture over the crusts in the muffin tin, filling each liner about 3/4 full.
  5. Bake for 20-25 minutes, or until the edges are set and the center has a slight jiggle. Remove from the oven and let cool at room temperature, then refrigerate for at least 2 hours to firm up.
  6. Once chilled, carefully remove the cheesecake bites from the muffin tin. Top with whipped cream and a sprinkle of graham cracker crumbs if desired before serving.
