Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 3 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Zest of 1 lemon
  • Zest of 1 lime
  • Fresh parsley, chopped for garnish

Instructions:

  1. In a bowl, whisk together olive oil, honey, Dijon mustard, lemon juice, lime juice, minced garlic, thyme, smoked paprika, salt, and pepper.
  2. Add lemon and lime zest to the marinade mixture and stir well.
  3. Place chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over the chicken. Seal or cover, and marinate in the refrigerator for at least 1 hour, or up to overnight for best flavor.
  4. Preheat the grill or oven to 375°F (190°C).
  5. Remove the chicken from the marinade and discard the marinade.
  6. Grill the chicken for about 6-7 minutes on each side or until the internal temperature reaches 165°F (74°C). If baking, place the chicken in a baking dish and bake for 20-25 minutes, or until cooked through.
  7. Let the chicken rest for 5 minutes before slicing.
  8. Garnish with chopped fresh parsley and serve with your choice of sides.
