Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 1/4 cup water
  • 1/4 cup granulated sugar (for compote)
  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract (for frosting)

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a large bowl, whisk together the flour, cocoa powder, granulated sugar, brown sugar, baking powder, baking soda, and salt.
  3. In another bowl, combine the melted butter, eggs, vanilla extract, and buttermilk. Mix well.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Pour the batter into the prepared cake pan and smooth the top.
  6. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  7. While the cake is cooling, prepare the berry compote by combining the mixed berries, water, and granulated sugar in a small saucepan over medium heat. Cook for about 5-7 minutes until the berries have softened and released their juices. Remove from heat and let cool.
  8. In a separate bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
  9. Once the cake is completely cooled, spread the berry compote over the top and add dollops of whipped cream on the side or on top as desired.
