Ingredients:

  • 1 and 3/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 1 and 1/2 teaspoons baking powder
  • 1 and 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup fresh raspberries
  • 1 cup heavy cream
  • 8 ounces dark chocolate, chopped

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, sift together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Beat on medium speed for 2 minutes until well combined.
  4. Stir in the boiling water until the batter is smooth (batter will be thin).
  5. Pour the batter evenly into the prepared cake pans.
  6. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the cakes to cool in the pans for 10 minutes, then remove from pans and cool completely on wire racks.
  8. For the raspberry ganache, heat the heavy cream in a saucepan until it begins to simmer. Remove from heat and add the chopped dark chocolate, stirring until melted and smooth.
  9. Add the fresh raspberries to the ganache and gently fold to combine.
  10. Once the cakes are cool, place one layer on a serving plate, spread half of the ganache on top, and then place the second layer on top. Pour the remaining ganache over the top, allowing it to drizzle down the sides.
  11. Garnish with additional fresh raspberries if desired. Slice and enjoy!
