Ingredients:

  • 200g dark chocolate (70% cocoa or higher)
  • 3 large eggs, separated
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy cream
  • 1 tablespoon espresso or strong coffee (optional)
  • A pinch of salt
  • Chocolate shavings or fresh berries for garnish

Instructions:

  1. Melt the dark chocolate in a heatproof bowl set over a pot of simmering water, stirring until smooth. Remove from heat and let cool slightly.
  2. In a separate bowl, whisk the egg yolks with half of the sugar and the vanilla extract until pale and creamy. Stir in the melted chocolate and espresso (if using).
  3. In another clean bowl, beat the egg whites with a pinch of salt until soft peaks form. Gradually add the remaining sugar and continue beating until stiff peaks form.
  4. In a fourth bowl, whip the heavy cream until soft peaks form.
  5. Gently fold the whipped egg whites into the chocolate mixture until no white streaks remain, then fold in the whipped cream until combined.
  6. Spoon the mousse into serving dishes and refrigerate for at least 2 hours, or until set.
  7. Before serving, garnish with chocolate shavings or fresh berries.
