Ingredients:

  • 200g dark chocolate (70% cocoa or higher)
  • 3 large eggs, separated
  • 50g granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy cream
  • Zest of 1 orange
  • Pinch of salt
  • Fresh orange segments (for garnish)
  • Whipped cream (for garnish)

Instructions:

  1. Melt the dark chocolate in a heatproof bowl over a pot of simmering water (double boiler method), stirring until smooth. Remove from heat and let it cool slightly.
  2. In a mixing bowl, whisk the egg yolks with the granulated sugar and vanilla extract until pale and creamy.
  3. Stir the melted chocolate into the egg yolk mixture until well combined. Add the orange zest and mix thoroughly.
  4. In another bowl, beat the egg whites with a pinch of salt until stiff peaks form. Gently fold the beaten egg whites into the chocolate mixture in three additions, being careful not to deflate the mixture.
  5. In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the chocolate mixture until fully incorporated.
  6. Spoon the mousse into serving glasses or bowls and refrigerate for at least 2 hours or until set.
  7. Before serving, garnish with fresh orange segments and a dollop of whipped cream.
