Ingredients:

  • 2 Maine lobsters, cooked and chilled
  • 1 cup all-purpose flour
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Vegetable oil for frying
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh chives, chopped

Instructions:

  1. Begin by preparing the lobsters: split them in half lengthwise and remove the meat from the claws and tail. Cut the lobster meat into bite-sized pieces and set aside.
  2. In a shallow dish, combine flour, paprika, salt, and pepper. In another dish, beat the eggs. In a third dish, place the breadcrumbs.
  3. Coat each piece of lobster meat in the flour mixture, dip it in the beaten eggs, and then roll it in the breadcrumbs until fully coated.
  4. In a deep pot, heat the vegetable oil to 350°F (175°C). Carefully add the coated lobster pieces to the hot oil in batches, frying until golden brown and crispy, about 3-4 minutes.
  5. Remove the fried lobster from the oil and drain on paper towels to remove excess oil.
  6. To make the lemon herb aioli, whisk together mayonnaise, Dijon mustard, lemon juice, lemon zest, parsley, and chives in a bowl until smooth.
  7. Serve the deep-fried lobster with the lemon herb aioli on the side for dipping.
