Ingredients:

  • 1 cup almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup Greek yogurt
  • 1/4 cup unsweetened applesauce
  • 1/4 cup erythritol or a suitable sugar substitute
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup dark chocolate chips (sugar-free if desired)

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease an 8x8 inch baking pan.
  2. In a large mixing bowl, combine almond flour, cocoa powder, erythritol, baking powder, and salt.
  3. In another bowl, whisk together the Greek yogurt, applesauce, eggs, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
  5. Fold in the dark chocolate chips gently.
  6. Spread the batter evenly in the prepared baking pan.
