Ingredients:

  • 1 cup brown rice, uncooked
  • 2 cups low-sodium chicken broth
  • 1 cup diced ham (preferably low-sodium)
  • 1 cup broccoli florets
  • 1 cup diced bell peppers (red and green)
  • 1 cup shredded reduced-fat cheddar cheese
  • 1/2 cup low-fat milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1 tablespoon olive oil
  • 1/4 cup chopped green onions (for garnish)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a medium saucepan, combine the brown rice and chicken broth. Bring to a boil, then reduce heat, cover, and simmer for about 30 minutes, or until rice is tender and liquid is absorbed.
  3. In a large mixing bowl, combine the cooked rice, diced ham, broccoli, bell peppers, half of the cheese, low-fat milk, garlic powder, onion powder, black pepper, and paprika. Mix well until all ingredients are evenly combined.
  4. Transfer the mixture into a greased 9x13 inch baking dish, spreading it evenly.
  5. Sprinkle the remaining cheese on top of the casserole.
  6. Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
  7. Let it cool for a few minutes before serving. Garnish with chopped green onions.
