Ingredients:

  • 1 cup fresh strawberries, hulled and sliced
  • 1 tablespoon lemon juice
  • 1 tablespoon sugar substitute (like Stevia or erythritol)
  • 1 cup Greek yogurt (fat-free or low-fat)
  • 1/2 teaspoon vanilla extract
  • 1/4 cup almond flour
  • 1/4 cup rolled oats
  • 1/4 cup unsweetened coconut flakes
  • 1/4 teaspoon cinnamon
  • 1 tablespoon melted coconut oil

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine the almond flour, rolled oats, coconut flakes, cinnamon, and melted coconut oil. Mix until crumbly.
  3. Press the mixture into the bottom of a greased 8x8 inch baking dish to form a crust.
