Ingredients:

  • 1 sheet of phyllo dough, thawed
  • 2 medium ripe pears, peeled, cored, and thinly sliced
  • 1 tablespoon lemon juice
  • 1 teaspoon cinnamon
  • 1 tablespoon unsweetened applesauce
  • 1 tablespoon erythritol or another sugar substitute
  • 1 tablespoon chopped walnuts (optional)
  • 1 tablespoon unsweetened almond milk (for brushing)
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the sliced pears, lemon juice, cinnamon, applesauce, erythritol, and walnuts (if using). Mix until the pears are well coated.
  3. Lay the phyllo dough on a clean, dry surface. Brush a thin layer of almond milk over the dough to keep it moist.
  4. Spoon the pear mixture along one edge of the phyllo dough, leaving a small border.
  5. Carefully fold the sides of the phyllo over the filling, then roll it up tightly from the filled edge to form a log.
  6. Place the strudel seam-side down on a baking sheet lined with parchment paper.
  7. Brush the top of the strudel with the remaining almond milk.
  8. Bake for 25-30 minutes, or until the phyllo is golden brown and crispy.
  9. Allow to cool slightly before slicing. Serve warm or at room temperature.
