Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup butter, softened (for frosting)
  • 4 cups powdered sugar
  • 2 tablespoons milk (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • Mini marshmallows (for bunny ears and noses)
  • Chocolate chips (for eyes)
  • Pink icing (for decoration)

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, followed by the milk and vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
  6. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow cupcakes to cool completely.
  7. While the cupcakes are cooling, prepare the buttercream frosting by beating the softened butter until creamy. Gradually add the powdered sugar, milk, and vanilla extract, mixing until smooth and fluffy.
  8. Once the cupcakes are cool, generously frost each one with the buttercream.
  9. To create bunny faces, cut mini marshmallows in half diagonally to form ears and place them on top of the frosting. Use chocolate chips for the eyes and a small piece of pink icing for the nose.
