Ingredients:

  • 2 cups cooked rice (preferably day-old)
  • 2 large eggs
  • 1 cup peas (fresh or frozen)
  • 1 medium carrot, diced
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste
  • Green onions for garnish (optional)

Instructions:

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the diced red onion and sauté until translucent, about 2 minutes.
  3. Stir in the diced carrot and red pepper, cooking for another 3-4 minutes until just tender.
  4. Push the vegetables to one side of the skillet. Crack the eggs into the skillet and scramble until fully cooked.
