Ingredients:

  • 2 cups fresh corn kernels (or 4 ears of corn)
  • 1 ripe avocado, diced
  • 1/2 cup cotija cheese, crumbled
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 1 tablespoon mayonnaise
  • 1 teaspoon chili powder
