Ingredients:

  • 1 cup farro
  • 2 cups vegetable broth or water
  • 2 cups kale, chopped
  • 1 large onion, thinly sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese (optional)
  • 1 tablespoon balsamic vinegar

Instructions:

  1. 1. Rinse the farro under cold water. In a medium saucepan, combine farro and vegetable broth or water. Bring to a boil, then reduce heat, cover, and simmer for about 30 minutes or until tender. Drain any excess liquid.
  2. 2. While the farro cooks, heat olive oil in a large skillet over medium heat. Add the sliced onions and a pinch of salt, and cook, stirring occasionally, until caramelized, about 15-20 minutes.
  3. 3. Add minced garlic to the skillet and sauté for an additional 1-2 minutes until fragrant.
  4. 4. Stir in the chopped kale and cook until wilted, about 3-4 minutes. Season with salt, pepper, and balsamic vinegar.
  5. 5. Combine the cooked farro with the kale and caramelized onion mixture. Toss well to combine. If desired, sprinkle with grated Parmesan cheese before serving.
