Ingredients:

  • 2 cups fermented squid, chopped
  • 4 large eggs, separated
  • 1/2 cup milk
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon lemon zest
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1 tablespoon all-purpose gluten-free flour
  • 1/2 teaspoon baking powder

Instructions:

  1. Preheat the oven to 375°F (190°C) and grease a soufflé dish with olive oil.
  2. In a mixing bowl, combine the chopped fermented squid, milk, lemon zest, parsley, salt, black pepper, cayenne pepper, gluten-free flour, and baking powder. Mix well.
  3. In a separate bowl, beat the egg yolks until they are pale and thick. Gradually fold them into the squid mixture until fully combined.
  4. In another clean bowl, whip the egg whites until stiff peaks form. Gently fold the whipped egg whites into the squid mixture, being careful not to deflate the air.
