Ingredients:

  • 2 pieces of firm white fish (like cod or tilapia)
  • 1 tablespoon turmeric powder
  • 1 tablespoon red chili powder
  • 1 tablespoon lemon juice
  • Salt to taste
  • 1 tablespoon oil (coconut or mustard oil)
  • 1 cup basmati rice
  • 2 cups water
  • 1 teaspoon cumin seeds
  • 1 onion, finely chopped
  • 1 tomato, chopped
  • 1 cup mixed vegetables (carrot, peas, beans)
  • 1 tablespoon ginger-garlic paste
  • 1 tablespoon garam masala
  • Fresh coriander leaves for garnish
  • 1 cup yogurt
  • 1 tablespoon mint chutney

Instructions:

  1. Marinate the fish with turmeric, red chili powder, lemon juice, and salt for at least 30 minutes.
  2. In a pot, heat oil and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
  3. Add ginger-garlic paste and chopped tomatoes, cooking until the tomatoes are soft.
  4. Stir in the mixed vegetables and cook for a few minutes. Add garam masala and mix well.
  5. Add the basmati rice and water, bringing it to a boil. Reduce heat, cover, and simmer until rice is cooked and water is absorbed (about 15 minutes).
  6. While the rice is cooking, grill the marinated fish on a hot grill or pan for about 3-4 minutes on each side or until cooked through.
  7. Serve the grilled fish alongside the fragrant rice, topped with fresh coriander leaves. Add a side of yogurt and mint chutney for a refreshing touch.
