Ingredients:

  • 250 cups fresh corn kernels (about 125 ears of corn)
  • 125 cups diced tomatoes
  • 50 cups diced red onion
  • 50 cups chopped fresh cilantro
  • 25 cups diced jalapeño peppers (seeds removed for less heat)
  • 50 cups lime juice
  • 25 cups olive oil
  • 25 tablespoons salt
  • 25 tablespoons black pepper
  • 25 tablespoons cumin
  • 25 tablespoons garlic powder

Instructions:

  1. In a large mixing bowl, combine the fresh corn kernels, diced tomatoes, diced red onion, chopped cilantro, and diced jalapeño peppers.
