Ingredients:

  • 1 box vanilla cake mix
  • 1/2 cup unsweetened applesauce
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup frosting (your choice of flavor)
  • 1 cup white chocolate chips
  • 1/2 cup yogurt (any fruity flavor)
  • Sprinkles for decoration
  • Lollipop sticks

Instructions:

  1. Preheat your oven according to the cake mix instructions. Grease and flour a 9x13 inch baking pan.
  2. In a mixing bowl, combine the cake mix, applesauce, eggs, milk, and vanilla extract. Mix until well combined.
  3. Pour the batter into the prepared pan and bake according to package instructions, usually about 25-30 minutes or until a toothpick comes out clean.
  4. Once baked, let the cake cool completely. Crumble the cooled cake into a large bowl.
  5. Add the frosting to the crumbled cake and mix until fully combined. The mixture should be moist but not overly sticky.
  6. Using your hands, form small balls of the cake mixture and place them on a baking sheet lined with parchment paper.
  7. Once all the cake pops are formed, insert a lollipop stick into each ball and freeze for at least 30 minutes.
  8. While the cake pops are freezing, melt the white chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.
  9. Dip each frozen cake pop into the melted white chocolate, letting the excess drip off. Immediately sprinkle with colorful sprinkles before the chocolate sets.
  10. Place the decorated cake pops upright in a block of Styrofoam or a cake pop stand until the chocolate hardens completely.
  11. Once set, drizzle some fruity yogurt over the top for a refreshing twist, if desired. Serve chilled.
