Ingredients:

  • 2 tablespoons olive oil
  • 1 large onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 apple, peeled and diced
  • 1 pear, peeled and diced
  • 1 cup diced tomatoes (canned or fresh)
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon fresh rosemary, chopped
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste
  • 1 cup vegetable broth
  • 1 tablespoon balsamic vinegar
  • Fresh parsley, for garnish

Instructions:

  1. Heat olive oil in a large pot over medium heat.
  2. Add the sliced onion and cook until soft and caramelized, about 10 minutes.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Add the diced apple and pear, cooking for about 5 minutes until they start to soften.
  5. Incorporate the diced tomatoes, thyme, rosemary, cinnamon, salt, and pepper.
  6. Pour in the vegetable broth and bring to a simmer.
  7. Reduce heat and let the stew simmer for 20 minutes, allowing the flavors to meld.
