Ingredients:

  • 1 cup red lentils (masoor dal)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder (adjust to taste)
  • 2 cups vegetable broth or water
  • 1 cup diced mango
  • 1 cup diced pineapple
  • 1/2 cup diced apple
  • 1 tablespoon lemon juice
  • Salt to taste
  • Fresh cilantro for garnish

Instructions:

  1. Rinse the red lentils under cold water until the water runs clear. Drain and set aside.
  2. In a pot, heat a splash of oil over medium heat. Add cumin seeds and let them sizzle for a few seconds.
  3. Add the chopped onion and sauté until translucent. Stir in the garlic and ginger, cooking for another minute until fragrant.
  4. Add the turmeric, coriander powder, and red chili powder, stirring well to combine.
  5. Mix in the rinsed lentils and pour in the vegetable broth or water. Bring to a boil, then reduce heat and let it simmer for about 15-20 minutes, or until the lentils are soft.
  6. Once the dal is cooked, stir in the diced mango, pineapple, and apple. Cook for another 5 minutes to allow the flavors to meld.
  7. Finish with lemon juice and salt to taste. Garnish with fresh cilantro before serving.
