Ingredients:

  • 4 cups homemade bone broth
  • 1 cup carrots, diced
  • 1 cup zucchini, diced
  • 1 cup celery, diced
  • 1 cup spinach, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1/2 onion, diced
  • 2 cloves garlic, minced

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and cook for an additional minute until fragrant.
  3. Stir in the diced carrots, zucchini, and celery, and cook for another 5-7 minutes until the vegetables start to soften.
  4. Pour in the homemade bone broth and bring to a boil.
  5. Reduce the heat to a simmer and add the chopped spinach, dried thyme, salt, and black pepper.
  6. Simmer for 15-20 minutes until all vegetables are tender.
  7. Taste and adjust seasoning if necessary. Serve warm.
