Ingredients:

  • 2 boneless, skinless chicken breasts, sliced
  • 2 cups broccoli florets
  • 1 cup carrots, julienned
  • 3 cloves garlic, minced
  • 8 oz rice noodles
  • 4 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • 1 egg, beaten

Instructions:

  1. Cook the rice noodles according to package instructions. Drain and set aside.
  2. In a large pan or wok, heat the vegetable oil over medium-high heat. Add minced garlic and stir-fry for 30 seconds until fragrant.
  3. Add the sliced chicken to the pan, seasoning with salt and pepper. Cook until the chicken is no longer pink, about 5-7 minutes.
  4. Add the broccoli and carrots to the pan, stir-frying for another 3-4 minutes until the vegetables are tender-crisp.
  5. Push the chicken and vegetables to one side of the pan, and pour the beaten egg into the other side. Scramble the egg until fully cooked, then mix everything together.
  6. Add the cooked rice noodles to the pan, followed by the soy sauce and sesame oil. Toss everything together until well combined and heated through.
  7. Serve hot, garnished with additional soy sauce if desired.
