Ingredients:

  • 2 chicken breasts
  • 4 tablespoons goose fat
  • 1 bulb of garlic
  • 2 medium onions, sliced
  • 1 cup crème fraîche
  • Salt and pepper, to taste
  • Fresh herbs (such as thyme or parsley), for garnish

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Slice the top off the garlic bulb to expose the cloves, drizzle with a little goose fat, and wrap it in foil. Roast in the oven for about 30 minutes until soft.
  3. While the garlic is roasting, heat 2 tablespoons of goose fat in a skillet over medium heat. Add the sliced onions and cook until they are caramelized, about 15-20 minutes.
  4. Season the chicken breasts with salt and pepper. In a separate pan, heat the remaining goose fat over medium-high heat. Sear the chicken breasts for about 4-5 minutes on each side until golden brown.
  5. Once the chicken is seared, transfer it to a baking dish. Add the caramelized onions on top and squeeze the roasted garlic cloves over the chicken. Pour the crème fraîche over everything.
  6. Bake in the oven for 20-25 minutes until the chicken is cooked through and the sauce is bubbly.
  7. Garnish with fresh herbs before serving.
