Ingredients:

  • 1 pound fresh green beans, trimmed
  • 4 cloves garlic, minced
  • 1 tablespoon pickling spice
  • 1 tablespoon pickling salt
  • 1 cup white vinegar
  • 1 cup water
  • 1 teaspoon red pepper flakes

Instructions:

  1. In a medium saucepan, combine the vinegar, water, pickling salt, pickling spice, and minced garlic. Bring to a boil over medium heat, stirring until the salt dissolves.
  2. While the brine is heating, prepare an ice bath in a large bowl with water and ice.
  3. Once the brine is boiling, add the green beans and blanch them for 2-3 minutes until they are bright green and tender-crisp.
  4. Using a slotted spoon, transfer the green beans to the ice bath to stop the cooking process. Let them cool for a few minutes.
  5. After cooling, drain the green beans and pack them tightly into a sterilized jar.
  6. Pour the hot brine over the green beans, ensuring they are fully submerged. Sprinkle the red pepper flakes on top.
  7. Seal the jar and let it cool to room temperature before refrigerating. Allow the flavors to meld for at least 24 hours before serving.
