Garlic Shrimp and Eggplant Stir-Fry

Ingredients:

  • 1 lb shrimp, peeled and deveined
  • 1 medium eggplant, cubed
  • 3 green onions, chopped
  • 2 medium tomatoes, diced
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon red pepper flakes (optional)
  • 1 tablespoon soy sauce (or tamari for gluten-free)
  • Fresh basil for garnish

Instructions:

  1. Heat olive oil in a large skillet over medium heat.
  2. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add the cubed eggplant to the skillet and cook for 5-7 minutes, stirring occasionally, until softened.
  4. Stir in the diced tomatoes and cook for an additional 3-4 minutes until the tomatoes start to break down.
  5. Add the shrimp to the skillet and season with salt, black pepper, and red pepper flakes (if using). Cook for 3-5 minutes until the shrimp are pink and opaque.
  6. Finally, add the chopped green onions and soy sauce, stirring well to combine. Cook for an additional minute.
  7. Remove from heat and garnish with fresh basil before serving.
