Ingredients:

  • 200g dark chocolate (70% cocoa)
  • 150g unsalted butter
  • 150g granulated sugar
  • 3 large eggs
  • 100g all-purpose flour
  • 1 teaspoon vanilla extract
  • 1 tablespoon brewed espresso
  • Zest of 1 orange
  • Pinch of salt

Instructions:

  1. Preheat your oven to 180°C (350°F). Grease and line an 8-inch round cake pan.
  2. In a heatproof bowl, melt the dark chocolate and butter together over a pot of simmering water, stirring until smooth.
  3. Remove from heat and stir in the sugar until fully combined.
  4. Add the eggs one at a time, mixing well after each addition.
  5. In a separate bowl, whisk together the flour, salt, and orange zest.
  6. Fold the dry ingredients into the chocolate mixture until just combined.
  7. Stir in the vanilla extract and brewed espresso until smooth.
  8. Pour the batter into the prepared cake pan and smooth the top.
  9. Bake for 25-30 minutes, or until a skewer inserted into the center comes out with a few moist crumbs.
  10. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
