Ingredients:

  • 4 skinless boneless chicken thighs
  • 2 tablespoons fresh ginger, minced
  • 3 cloves garlic, minced
  • 1 cup plain yogurt
  • 1 medium onion, sliced
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 2 tablespoons apricot jam
  • 2 medium sweet potatoes, peeled and cubed
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions:

  1. In a bowl, combine yogurt, ginger, garlic, soy sauce, honey, and apricot jam. Mix well to create a marinade.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to overnight for deeper flavor.
