Ingredients:

  • 4 chicken thighs, bone-in and skin-on
  • 2 tablespoons fresh ginger, grated
  • 4 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • 2 green onions, chopped (for garnish)

Instructions:

  1. In a bowl, mix the grated ginger, minced garlic, soy sauce, honey, sesame oil, salt, and pepper to create a marinade.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Let them marinate in the refrigerator for at least 30 minutes, or up to 2 hours for maximum flavor.
  3. Preheat your grill or oven to medium-high heat.
  4. While the grill is heating, slice the bell peppers and toss them with a little olive oil, salt, and pepper.
  5. Grill the marinated chicken thighs for about 6-7 minutes on each side, or until they reach an internal temperature of 165°F (75°C). If baking, place them on a baking sheet and bake for about 25-30 minutes.
