Ingredients:

  • 2 inches fresh ginger root, peeled and sliced
  • 1 lemon, juiced
  • 1 handful fresh mint leaves
  • 4 cups water
  • 1-2 tablespoons honey (optional, adjust for sweetness)
  • Ice cubes (optional)

Instructions:

  1. In a pot, bring 4 cups of water to a boil.
  2. Add the sliced ginger to the boiling water and let it simmer for about 10-15 minutes.
  3. Remove from heat and let it cool slightly.
  4. Strain the ginger water into a pitcher, discarding the ginger slices.
