Ingredients:

  • 1 lb ground beef (80/20)
  • 1 large onion, thinly sliced
  • 2 tablespoons olive oil
  • 4 oz blue cheese, crumbled
  • 4 whole wheat burger buns
  • 1 cup arugula
  • 2 tablespoons balsamic glaze
  • Salt and pepper to taste
  • 1 tablespoon Dijon mustard (optional)

Instructions:

  1. Heat olive oil in a skillet over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized and golden brown, about 15-20 minutes. Season with salt and pepper.
  2. While the onions are cooking, shape the ground beef into 4 equal patties. Season both sides with salt and pepper.
  3. Preheat a grill or grill pan over medium-high heat. Cook the burger patties for about 4-5 minutes on each side or until they reach your desired level of doneness.
  4. During the last minute of cooking, place crumbles of blue cheese on top of each patty to allow it to melt slightly.
  5. To assemble the burgers, spread Dijon mustard on the bottom half of each bun (if using), then add the beef patty with melted blue cheese, a generous portion of caramelized onions, and a handful of fresh arugula. Drizzle with balsamic glaze before placing the top bun.
  6. Serve immediately with your favorite side.
