Ingredients:

  • 1/2 cup grape juice
  • 1/4 cup alfalfa powder
  • 1 cup oat milk
  • 2 tablespoons lard
  • 1/2 teaspoon guar gum
  • 1 teaspoon apple pectin
  • 1/4 teaspoon salt
  • 1/4 cup liquid
  • 1 cup pancake mix
  • 2/3 cup water

Instructions:

  1. In a large bowl, combine the grape juice, alfalfa powder, oat milk, lard, guar gum, apple pectin, and salt. Mix until well combined.
  2. In a separate bowl, mix the pancake mix with the 1/4 cup of liquid and 2/3 cup of water until smooth.
  3. Gradually add the wet mixture to the pancake mix, stirring until just combined. Be careful not to overmix.
  4. Heat a non-stick skillet over medium heat and lightly grease it with a bit of lard.
  5. Pour 1/4 cup of the pancake batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
  6. Serve warm with your favorite syrup or fresh fruit.
