Ingredients:

  • 4 bone-in, skin-on chicken thighs
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon red pepper flakes (optional)
  • 2 green onions, sliced (for garnish)
  • Sesame seeds (for garnish)

Instructions:

  1. In a bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, minced garlic, grated ginger, and red pepper flakes until well combined.
  2. Place the chicken thighs in a resealable plastic bag and pour the marinade over them. Seal the bag and massage the marinade into the chicken. Refrigerate for at least 1 hour, or overnight for best results.
  3. Preheat your grill to medium-high heat. Remove the chicken from the marinade, allowing excess marinade to drip off.
  4. Place the chicken thighs skin-side down on the grill. Cook for about 6-8 minutes until the skin is crispy and golden brown.
  5. Flip the chicken thighs and cook for an additional 6-8 minutes, or until the internal temperature reaches 165°F (75°C).
  6. Remove from the grill and let rest for 5 minutes before serving.
  7. Garnish with sliced green onions and sesame seeds before serving.
