Ingredients:

  • 2 slices of sourdough bread
  • 1 slice of sharp cheddar cheese
  • 2 tablespoons of olive oil
  • 1 teaspoon of fresh rosemary, chopped
  • 1 teaspoon of fresh thyme, chopped
  • Salt and pepper to taste

Instructions:

  1. In a small bowl, mix the olive oil with the chopped rosemary and thyme. Let it sit for about 10 minutes to infuse the flavors.
  2. Preheat a skillet over medium heat.
  3. Brush one side of each slice of sourdough bread with the herb-infused olive oil.
  4. Place one slice of bread, oiled side down, in the skillet. Add the cheese slice on top.
  5. Top with the second slice of bread, oiled side up.
  6. Cook until the bottom slice is golden brown, about 3-4 minutes, then carefully flip the sandwich and cook the other side until golden and the cheese is melted, another 3-4 minutes.
  7. Remove from the skillet, slice in half, and serve warm.
