Ingredients:

  • 8 chicken drumsticks
  • 2 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 ripe peaches, halved and pitted
  • 4 cups arugula
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons balsamic glaze
  • Fresh mint leaves for garnish

Instructions:

  1. In a bowl, combine olive oil, apple cider vinegar, smoked paprika, garlic powder, onion powder, salt, and pepper. Add chicken drumsticks and coat thoroughly. Marinate for at least 30 minutes.
  2. Preheat the grill to medium-high heat.
  3. Grill the chicken drumsticks for about 30-35 minutes, turning occasionally until they are cooked through and have a nice char.
  4. While the chicken is grilling, grill the peach halves cut-side down for about 3-4 minutes until grill marks appear and they soften slightly.
