Ingredients:

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 cups mixed salad greens (like arugula, spinach, and romaine)
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, thinly sliced
  • 1/4 red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled (optional)
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • Juice of 1 orange
  • Zest of 1 lemon
  • Salt and pepper to taste

Instructions:

  1. Preheat the grill to medium-high heat.
  2. In a small bowl, mix olive oil, paprika, garlic powder, salt, and pepper. Rub this mixture onto the chicken breasts.
  3. Grill the chicken for about 6-7 minutes on each side, or until fully cooked (internal temperature should reach 165°F). Remove from grill and let rest for 5 minutes before slicing.
