Ingredients:

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 4 cups romaine lettuce, chopped
  • 1 cup bell peppers, sliced (any color)
  • 1/2 purple onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup ranch dressing
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat the grill to medium-high heat.
  2. In a small bowl, mix olive oil, garlic powder, paprika, salt, and pepper. Rub this mixture evenly over the chicken breasts.
  3. Grill the chicken for about 6-7 minutes on each side or until fully cooked and the internal temperature reaches 165°F (75°C). Remove from grill and let rest for a few minutes.
