Ingredients:

  • 4 chicken thighs, bone-in and skin-on
  • 1/4 cup olive oil
  • 1 lemon, juiced and zested
  • 1 orange, juiced and zested
  • 3 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika

Instructions:

  1. In a bowl, whisk together olive oil, lemon juice, orange juice, lemon zest, orange zest, minced garlic, rosemary, thyme, salt, black pepper, and smoked paprika to create the marinade.
  2. Place the chicken thighs in a resealable plastic bag or a shallow dish and pour the marinade over them. Seal the bag or cover the dish, and refrigerate for at least 1 hour, preferably overnight for maximum flavor.
  3. Preheat the grill to medium-high heat. Remove the chicken from the marinade, allowing excess marinade to drip off.
  4. Grill the chicken thighs skin-side down for about 6-8 minutes, then flip and grill for another 6-8 minutes or until the internal temperature reaches 165°F (75°C).
  5. Remove from the grill and let rest for 5 minutes before serving.
