Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 large red bell peppers, sliced
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions:

  1. Preheat your grill to medium-high heat.
  2. In a bowl, combine olive oil, minced garlic, dried oregano, smoked paprika, salt, and pepper.
  3. Add the chicken breasts to the marinade and let them sit for at least 15 minutes.
  4. While the chicken is marinating, toss the sliced red bell peppers with a tablespoon of olive oil, salt, and pepper.
  5. Place the peppers on a grill-safe tray or foil and grill them alongside the chicken.
  6. Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
  7. At the same time, grill the peppers until they are tender and slightly charred, about 10-12 minutes.
  8. Remove the chicken and peppers from the grill, let them rest for a few minutes, then slice the chicken.
  9. Serve the grilled chicken topped with the roasted red bell peppers and garnish with fresh basil if desired.
