Ingredients:

  • 4 chicken thighs, bone-in and skin-on
  • 1/4 cup olive oil
  • 2 lemons, juiced and zested
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions:

  1. In a mixing bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, chopped rosemary, chopped thyme, honey, salt, and pepper to create the marinade.
  2. Place the chicken thighs in a large resealable plastic bag or a glass dish and pour the marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish, and refrigerate for at least 1 hour, or up to overnight for more flavor.
  3. Preheat the grill to medium-high heat. Remove the chicken from the marinade and let any excess drip off.
