Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 2 lemons (juiced and zested)
  • 3 cloves garlic (minced)
  • 2 tablespoons fresh rosemary (chopped)
  • 2 tablespoons fresh thyme (chopped)
  • Salt and pepper to taste
  • 1 cup plain yogurt
  • 1 tablespoon honey
  • 1 teaspoon smoked paprika

Instructions:

  1. In a bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, rosemary, thyme, salt, and pepper to create the marinade.
  2. Place the chicken breasts in a resealable bag or shallow dish and pour the marinade over them. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight.
  3. Preheat the grill to medium-high heat. Remove the chicken from the marinade and discard the marinade.
  4. Grill the chicken for 6-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C).
  5. While the chicken is grilling, prepare the garlic yogurt sauce by mixing plain yogurt, honey, minced garlic, and smoked paprika in a bowl. Season with salt to taste.
  6. Once the chicken is done, let it rest for a few minutes before slicing. Serve with the garlic yogurt sauce on the side.
