Ingredients:

  • 2 ripe mangoes, peeled and sliced
  • 4 large eggs
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 teaspoon lime juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups mixed greens
  • 1/4 cup chopped fresh cilantro

Instructions:

  1. Preheat the grill to medium-high heat.
  2. Brush the mango slices with 1 tablespoon of olive oil and grill for about 2-3 minutes on each side until grill marks appear and the mango is slightly softened.
  3. While the mango is grilling, place the eggs in a pot and cover with water. Bring to a boil, then cover and remove from heat. Let sit for 12 minutes, then transfer to an ice bath to cool.
  4. In a small bowl, whisk together the remaining olive oil, honey, lime juice, salt, and pepper to create a dressing.
  5. Once the eggs are cool, peel and slice them.
  6. In a large bowl, combine the mixed greens, grilled mango, and sliced eggs. Drizzle with the dressing and toss gently to combine.
  7. Garnish with chopped cilantro and serve immediately.
