Ingredients:

  • 1 lb octopus, cleaned
  • 4 cups water
  • 1 onion, quartered
  • 2 bay leaves
  • 1 lemon, juiced
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh oregano, chopped
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions:

  1. In a large pot, combine water, onion, bay leaves, and salt. Bring to a boil.
  2. Add the octopus to the boiling water and simmer for about 45 minutes or until tender.
  3. Remove the octopus from the pot and let it cool slightly. Once cooled, cut into manageable pieces.
