Ingredients:

  • 2 salmon fillets
  • 1 pound Brussels sprouts, halved
  • 2 medium sweet potatoes, peeled and cubed
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon fresh thyme leaves

Instructions:

  1. Preheat your grill to medium-high heat.
  2. In a large bowl, toss the Brussels sprouts and sweet potatoes with 2 tablespoons of olive oil, garlic powder, paprika, salt, and pepper until well coated.
  3. Spread the vegetables on a baking sheet and roast in the oven at 425°F (220°C) for about 25-30 minutes, or until tender and caramelized, stirring halfway through.
  4. While the vegetables are roasting, brush the salmon fillets with the remaining olive oil and season with salt, pepper, and thyme.
  5. Grill the salmon for about 4-5 minutes on each side, or until cooked through and flaky.
  6. Remove the vegetables from the oven and drizzle with lemon juice before serving.
  7. Plate the grilled salmon alongside the roasted Brussels sprouts and sweet potatoes, garnishing with additional thyme if desired.
