Ingredients:

  • 2 ribeye steaks
  • 1 cup cherry tomatoes
  • 8 oz burrata cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • Fresh basil leaves, for garnish
  • Balsamic reduction, for drizzling

Instructions:

  1. Preheat your grill to medium-high heat.
  2. In a bowl, toss the cherry tomatoes with 1 tablespoon of olive oil, minced garlic, salt, and pepper. Spread them on a baking sheet.
  3. Roast the tomatoes in the oven at 400°F (200°C) for about 15-20 minutes, or until they are blistered and soft.
  4. While the tomatoes are roasting, season the ribeye steaks with salt and pepper. Drizzle with the remaining olive oil.
  5. Grill the steaks for about 4-5 minutes per side for medium-rare, or until desired doneness. Remove from the grill and let rest for a few minutes.
