Ingredients:

  • 2 medium zucchinis, grated
  • 1 cup mushrooms, finely chopped
  • 1 medium onion, sliced
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Olive oil for grilling
  • Burger buns
  • Lettuce and tomato for serving

Instructions:

  1. In a large bowl, mix grated zucchini, chopped mushrooms, breadcrumbs, Parmesan cheese, egg, minced garlic, oregano, salt, and pepper until well combined.
  2. Form the mixture into patties and refrigerate for about 30 minutes to help them hold their shape.
  3. While the patties chill, heat a skillet over medium heat and add a little olive oil. Sauté the sliced onions until they are caramelized and golden brown, about 10-15 minutes. Set aside.
  4. Preheat a grill or grill pan over medium-high heat. Brush the grill with olive oil to prevent sticking.
  5. Grill the zucchini and mushroom patties for about 5-7 minutes on each side, or until they are golden and cooked through.
  6. Assemble the burgers by placing a patty on the bottom half of a bun, topping it with caramelized onions, lettuce, and tomato. Place the top half of the bun on and serve immediately.
