Ingredients:

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup fresh blackberries, plus extra for garnish
  • 1 tablespoon fresh thyme leaves, chopped
  • 1/2 cup heavy cream
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon milk (for brushing on top)

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.
  4. Gently fold in the blackberries and thyme, being careful not to crush the berries.
  5. In a separate bowl, whisk together the heavy cream, egg, and vanilla extract.
  6. Pour the cream mixture into the dry ingredients and stir gently until just combined. Do not overmix; the dough should be slightly sticky.
  7. Turn the dough out onto a floured surface and pat it into a circle about 1 inch thick. Cut out scones using a round cutter or knife.
  8. Place the scones on the prepared baking sheet. Brush the tops with milk for a golden finish.
  9. Bake for 15-20 minutes, or until the scones are lightly golden on top.
  10. Let cool slightly before serving, garnished with extra blackberries.
