Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 1 can (14 oz) diced tomatoes
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Fresh cilantro for garnish

Instructions:

  1. Rinse the quinoa under cold water and drain. In a medium saucepan, bring 2 cups of water to a boil. Add the quinoa, reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and water is absorbed.
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.
  4. Add the diced tomatoes, chickpeas, cumin, coriander, turmeric, garam masala, and salt. Stir well to combine and let it simmer for about 10-15 minutes, allowing the flavors to meld.
  5. Once the curry is cooked, serve it over the quinoa and garnish with fresh cilantro.
