Ingredients:

  • 5 lbs beef sirloin tips, trimmed and cubed
  • 3 tablespoons olive oil
  • 2 large onions, chopped
  • 4 cloves garlic, minced
  • 6 cups mixed bell peppers (red, yellow, green), sliced
  • 4 cups mushrooms, sliced
  • 4 cups low-sodium beef broth
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons dried thyme
  • 2 teaspoons dried rosemary
  • 1 teaspoon black pepper
  • 1 teaspoon salt (or to taste)
  • 2 cups fresh spinach leaves
  • 1 tablespoon lemon juice
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the beef sirloin tips and brown on all sides, about 5-7 minutes.
  2. Add the chopped onions and minced garlic to the pot. Sauté until the onions are translucent, about 3-4 minutes.
  3. Stir in the sliced bell peppers and mushrooms, cooking until they soften, about 5 minutes.
  4. Pour in the low-sodium beef broth and Worcestershire sauce. Add thyme, rosemary, black pepper, and salt. Bring to a boil, then reduce heat to low and simmer for 30 minutes.
  5. Stir in the fresh spinach and lemon juice, cooking for an additional 5 minutes until the spinach wilts.
  6. Taste and adjust seasoning if necessary. Garnish with fresh parsley before serving.
